The 30 Arpents farm, family property of billionaire banker Benjamin de Rothschild, is located in the of Brie Boisée, at the junction of the Ferrières, Armainvilliers and Crécy forests. It is made up of 1000 hectares of forest, having 520 different crops and 80 pastures. Quite unique for a farm of this size, Edmond, father of Benjamin, wanted to keep a diversified agricultural activity of mixed farming and breeding, with the aim of developing a farm production of Brie cheese.

The herd of 250 Holstein cows produces about 2 million litres of milk annually which is processed into Brie de Meaux Fermier AOP. To date, the Ferme des 30 Arpents is the only producer of Brie de Meaux Fermier providing work to about 40 people.

Entirely handmade and prepared from raw cow’s milk, this Brie de Meaux Fermier is the only one in the world to be awarded the AOP distinction. Unlike other Bries de Meaux, this artisanal recipe never ceases to surprise and delight, as its taste and texture evolve according to the seasons and the herd’s natural diet.

Creamy, runny and of a very pale yellow colour on the inside and with a white velvety bloomy rind on the outside, it develops unmistakable earthy notes of truffle and oyster shell on the nose and a nutty flavour as it ages. All the manufacturing steps are carried out by hand. This cheese has two maturation phases which are, cold maturation at 10°C for 18 hours and hot maturation at 35°C for 30 minutes. Once molded by hand, the cheese is drained and salted before maturing for 8 weeks in the cellars of the estate. Store at a temperature of 8 to 10°C, preferably wrapped in a damp cloth to retain all its flavours.
