Banon 3 weeks PDO 100g
Banon is a goat’s cheese from the region of Banon, a discrete medieval village built against the plateau d’Albion between Lure and the Ventoux, by Fromagere de Provence.
This cheese is individually wrapped in 6 to 12 brown chestnut leaves and is bound by a strand of raffia. It is made from raw goat milks and ripened for 5 to 10 days at 14°C before folding into the sheets and maturing for at least another 10 days. Having a golden colour and offering a creamy and smooth texture delivering all the flavours of the undergrowth of Haute-Provence to the palate. With a mixture of sweet and strong flavours, the Banon has a unique taste that makes it a cheese with a very special character.
Serving and Cooking Suggestions
- paired with the lightest of white wines
- with a baguette or insanely crusty bread, even a hint of thinly sliced speck
- stuffed in courgette and baked
