Camembert Farmhouse Organic 250g
Ferme de la Tremblaye are located about an hour southwest of Paris, this tiny farm has 150 Jersey / Holstein cows and 350 Alpines Chamoisees / Murciana Granadina goats. The farm is certified biodynamic, conscious of animal welfare and also adopts the full circle concept in energy, self-sustaining the farm’s needs but also providing electricity to 600 houses in the village of La Boissière-Ecole.
This cheese, made exclusively with organic pasteurised milk from the farm’s own grass-fed cows is a smaller-format Camembert Fermier that echoes the mushroom and buttery flavours of the Brie Fermier, but with the vegetal notes toned down and is the closest thing you can get to a raw milk Camembert. Its aroma is mustier, pungent with a hint of herbs. The texture is more uniform, on the springy side but still creamy.
Rich, creamy, buttery and pungent, it may seem something died in your fridge, but don’t be alarmed, it’s ok, it’s just the cheese (hopefully). It offers a fine and supple crust and once you bite in, a creamy and melting texture echoing the essence of the French terroir; grass, mushrooms, undergrowth with a touch of barnyard / animal for a result that is both sweet and balanced in the mouth.
Serving and Cooking Suggestions
- pair with a Chardonnay, Cabernet, Champagne or a Normandy cider
- with crusty bread, a good baguette or with plain crackers
- accompanied with floral honeys, grapes or pecans
- grilled or baked, you can do it right in the box
