Boeren Goudse Oplegkaas 24-36 months
Boeren Goudse Oplegkaas is an unique classic Dutch cheese, which unfortunately is nearly extinct. There are only two farms left who are producing this 20kg beauty. The Cheese we have in Singapore, is crafted by the Van der Poel family in Rijpwetering.
In essence, the cheese is a semi-hard Gouda seasonal summer cheese made from raw, unpasteurized cow’s milk. The cheese is produced using age-old artisan techniques (pressing the cheese with linen cloths in wooden barrels). Perhaps the most characteristic of the cheese is that it has a slow ripening period of 2 to 4 years on wooden planks.
