Gouda Stompetoren Extra Matured 8 months
Stompetoren cheese is named after the village of Stompetoren in North Holland and is ripened in what is perhaps the most sustainable warehouse in the Netherlands. The region is a bit inland, but like much of the country is formed of lowlands and influenced by the nearby ocean coasts, with rich clay soil and sea air making it an excellent dairy country.
This Stompetoren, made from pasteurised cow’s milk, has been matured for about 8 months on the wooden shelves of the ripening warehouse. During the ripening process, the cheese is constantly turned and polished to maintain its glossy appearance. In the beginning several times a week, after a while a little less as it gets firmer.
The structure of the cheese is a bit more solid and the colour more intense than younger versions. The cheese develops a nice strong creamy spicy taste with possibly some ripening crystals.
Serving and Cooking Suggestions

● on its own as a snack or with some bread
● grated over or roasted vegetables or in a fondue
● used in canapes such as smoked devilled eggs
