Gouda Stompetoren Lightly Matured 2 months
Stompetoren cheese is named after the village of Stompetoren in North Holland and is ripened in what is perhaps the most sustainable warehouse in the Netherlands. The region is a bit inland, but like much of the country is formed of lowlands and influenced by the nearby ocean coasts, with rich clay soil and sea air making it an excellent dairy country.
This slightly matured Stompetoren, made from pasteurised cow’s milk, ripens for about 2 months before it has developed the optimal taste. During these weeks, the cheese is turned several times a week and cleaned where necessary. Due to the humid climate in the ripening warehouse, the cheese loses relatively little moisture during the ripening process. This keeps the cheeses wonderfully soft and creamy in taste and structure.
This cheese employs non-animal microbial rennet, making it vegetarian and has been nominated and recognised at the Dutch National Cheese Inspections.
