Gouda Stompetoren Matured 4 months
Stompetoren cheese is named after the village of Stompetoren in North Holland and is ripened in what is perhaps the most sustainable warehouse in the Netherlands. The region is a bit inland, but like much of the country is formed of lowlands and influenced by the nearby ocean coasts, with rich clay soil and sea air making it an excellent dairy country.
This Stompetoren, made from pasteurised cow’s milk, has been matured for about 4 months on the wooden shelves of the ripening warehouse. During the ripening process, the cheese is constantly turned and polished to maintain its glossy appearance. In the beginning several times a week, after a while a little less as it gets firmer.
This cheese is the best sold cheese in the Stompetoren collection and has won the title of ‘Best Cheese of The Netherlands’. The structure of the cheese is soft and creamy but solid and the colour a pale yellow. The cheese develops a nice mild creamy taste.
