The Margalet is a cheese from the Midi-Pyrénées region in France and more specifically the department of Aveyron in the Causses. It is a great French specialty!

Margalet is produced with sheep's milk that is characterized by a rugged natural rind. Its color ranges from ivory to orange depending on maturation time, which is a minimum of 18 days. This cheese with a particularly creamy texture delivers a delicate taste, but typical of sheep's milk cheese.
