Mimolette Vieille Echiquier 12 months PGI
Mimolette is a cheese traditionally produced around the city of Lille, France. In France it is also known as Boule de Lille after its city of origin or vieux Hollande because it was originally inspired by the Dutch Edam cheese.
It has a spherical shape and is similar in appearance to a cantaloupe melon. It normally weighs about 2kg and is its name comes from the French word mi-mou, meaning "semi-soft", which refers to the oily texture of this otherwise hard cheese. The bright orange colour of the paste comes from the natural colouring, roucou. The grey-coloured rind of aged Mimolette, resembling a moon-like surface, occurs from mites, microorganisms that aerate the crust and allow ripening, which are added to the surface of the cheese and serve to also enhance its flavour.
Mimolette was originally made by the request of Louis XIV, who in the context of Jean-Baptiste Colbert's mercantilist policies was looking for a native French product to replace the then very popular Edam. To make it distinct from Edam, it was first coloured using carrot juice, and later seasoned with roucou to give it a distinct orange colour. The cheese was known to be a favourite of French President Charles de Gaulle, also native of Lille.
This younger Mimolette, is made from pasteurised cow’s milk and aged for 12 months. It is quite dry and brittle but delivers a great nutty taste, reminiscent to that of Parmigiano-Reggiano and is salty and slightly sweet with toasty, caramel and coffee aromas.
