Saint Vincent 70g
Saint-Vincent is an artisanal cheese made from raw goat's milk, with a soft paste and a natural rind, made by Fromagerie Bernard located in Saint-Vincent-des-Près in the Saône-et-Loire department in the region Bourgogne-Franche-Comté.
It is a small cylindrical cheese of only 70 grams. Its rind, ivory to brown in colour, becomes covered over time with a white down with beige to grey and bluish areas. Its paste, white, is fine, dense and homogeneous. It becomes slightly crumbly when Le Saint-Vincent is semi-dry and then brittle when it is quite dry.
On the nose, this cheese has a scent of fresh milk and mushrooms. On the palate, Le Saint-Vincent offers a slightly tangy and salty flavour with sweet goat aromas. It will gain in character as it matures.
